Himalayan Chickpea Potato Salad

  1. Dice and peel your potatoes and place them in boiling water, turning the head down the medium low until soft. Drain and set aside.
  2. Drain and rinse your chickpeas. Layer them in a pan covered with a small amount of water and saute for 5 min and drain.
  3. Dice the tomatoes and green onions and mix the oils and spices in a small bowl!
  4. Add potatoes, chickpeas, tomatoes, and green onions to a large bowl, add the sauce and cilantro and let chill!
