Homemade Pizza
Ecolibrium3's very own, Zach, and his lovely partner, Alexandria, made homemade veggie pizza for last weeks Meatless Monday in our office! It was a delicious surprise and much needed as a Monday lunch pick-me-up!

Crust
  1. Combine 1/2 cup warm water with sugar and yeast. Stir to dissolve and let rest 5 minutes.
  2. add remaining water, olive oil, salt, and vinegar.
  3. gradually mix in flour- knead for 7 minutes. The dough should stick to itself, not your fingers.
  4. Rest in a warm place for 1 hour.
  5. Divide and roll out to desired thickness and diameter.
  6. rest for 20 minutes- preheat oven to 485 degrees

  1. over medium heat saute garlic in oil, add pepper and basil and cook until fragrant. Add tomatoes and a pinch of each sugar and salt.
  2. Simmer until thickened, around 15-20 minutes.
Bake
  1. slice up your choice of cheese and top with your favorite veggies!
  2. Pre-bake the crust on stone or pan for 4-6 minutes. Add the desired toppings of your choice and return to oven until crust is golden brown!
