  1. Prepare the rice noodles by boiling six cups of water and cooking the noodles for 8-10 minutes. Take out, drain, and rinse with cold water. Drizzle basil-infused olive oil.
  2. I love the natural flavor of tempeh. I find it to be delicious and nutty, a perfect pair with this dish! Slice the tempeh into one inch strips and saute on medium-high heat. Cook for 4-6 minutes until brown and flip. Sprinkle on seasonings and cook for another 4 minutes.
  3. Making the peanut sauce is quick, easy and delicious! Simply just blend all the ingredients together. Alternatively you can just buy a pre-made peanut sauce. I recommend the Taste of Thailand brand.
  4. Add your noodles and peanut sauce to the tempeh in a pan and stir. Let cook on medium heat for 4 minutes. Add crushed peanuts on top and enjoy!
