  1. Boil water, pour in bulgur, stir, cover and turn off heat. It should sit for 20-25 minutes or until the majority of the water has been absorbed
  2. Finely chop the parsley, mint, onion, and scallion.
  3. In a small bowl, mix olive oil, lemon juice, garlic, salt, and pepper. Toss in large bowl with chopped parsley and remaining ingredients!
