Vegetable Stir-fry
As a broke vegan in college I lived off some variation of this veggie stir fry. I just don't think you can go wrong with this combination! Any of these vegetables can be replaced to your preference or the season.

Instructions
  1. Start off washing the rice and throwing it in the rice cooker with 1 3/4 cups of water and a dash of salt
  2. Throw on onions and garlic with the oil on medium heat for one minute. Add brussel sprouts and carrots stirring occasionally for seven minutes,
  3. Add broccoli, green peppers, water chestnuts, and bamboo shoots along with all the seasonings for five minutes or as needed until the vegetables are tender.
  4. Serve on fresh basmati rice and ENJOY!
