The Eco3 Urban Farm community celebrated the summer harvest at the Summer Sampler! At the event, we had over 50 visitors who explored the farm, sampled fresh produce, and learned about the impact of the Food Corps volunteers. Food Corps Team Leader, Joelle Anderson, curated a menu highlighting the produce grown at the farm. The seasonal menu featured pesto, kale salad, vegan coleslaw, ranch, mixed-currant preserves, quick-pickles, and pickled beets. Thanks to Joelle’s leadership and the dedication of our Food Corps volunteers, the farm looked beautiful, and the samples showcased the incredible flavors of the summer harvest.
The Food Corps isn’t just increasing capacity at the farm; they are working on food access projects across the region. In Duluth, the Food Corps supports the Duluth Community Garden Program and volunteers weekly at Second Harvest. In Cloquet, Food Corps volunteers work each week with United Way of Carlton and Pine Counties, packing 200–400 shelf-stable food bags in just two to three hours for distribution to local children. We are so thankful for our Food Corps volunteers and their commitment to increasing food access in our community!
Inspired by the work of our AmeriCorps volunteers? Join us on Saturday, August 15, from 9:00 a.m. to 12:00 p.m., to help restore native habitat at the Eco3 Urban Farm by removing buckthorn, an invasive species that is overtaking native plants in our fungi forest. Together, we can improve the health of our urban forest and create more space for native plants to thrive.
