Please join us in welcoming Jacob Dillon to Ecolibrium3! With over 17 years of experience working in both the public, private, and non-profit sectors, in industries like the U.S. military and federal government, healthcare, advertising/PR agencies, and economic redevelopment, Jacob brings a wealth of knowledge. Jacob is joining us as our Grocery Store Manager and is jumping right in to help get LNPK Grocery ready to open. As part of his role, Jacob will oversee day-to-day operations and lead the store’s external messaging.
Jacob is passionate about being one of the faces directly serving the community and promoting food equity and access in Lincoln Park. He is most looking forward to helping people make smart nutritional decisions, getting to know the neighborhood, and engaging with the community after we open.
Jacob is originally from Minnesota, but has lived all over the country. In his free time, you can find him reading, listening to music (anything but Country), or spending time with family. After being away from home and making many trips to the North Shore as a kid, Jacob is looking forward to rediscovering winter again. Keep an eye out for Jacob in the store after we open, and give him a proper Minnesota welcome!
